Easy & Tasty Ham and Cheese Egg Cups

Ingredients (Makes 6–12 cups):

6–12 slices deli ham (thin but sturdy; black forest or honey ham works great)

6 large eggs

½ cup shredded cheese (cheddar, mozzarella, Swiss, or a mix)

Salt & pepper, to taste

Optional add-ins:

Diced bell peppers, spinach, onions, or green onions

A pinch of paprika, chili flakes, or everything bagel seasoning

Instructions:

1. Preheat Oven:

Set to 375°F (190°C).

Grease a muffin tin or spray with nonstick spray.

2. Assemble Cups:

Line each muffin cup with a slice of ham, pressing it down to form a little bowl.

Sprinkle in a bit of shredded cheese.

Crack 1 egg into each ham cup (or whisk the eggs first if you prefer a scramble-style texture).

Season with salt, pepper, and optional toppings.

3. Bake:

Bake for 12–15 minutes for runny yolks, or 15–18 minutes for fully cooked eggs.

Let cool for 2–3 minutes, then carefully remove from the tin.

Serve With:

Toast or avocado

A side of fruit or greens

Hot sauce or a drizzle of hollandaise

Storage & Reheating:

Store in an airtight container in the fridge for up to 5 days.

Reheat in microwave for 15–20 seconds.

Freezer-friendly: Let cool, then freeze individually. Reheat from frozen in the microwave or oven.

Tips:

Want fluffy cups? Whisk all the eggs together first and pour into ham-lined cups.

Want bite-size? Use a mini muffin tin and dice the ham.

Try with turkey, bacon, or even pastrami for different flavors.
