Beef and Cheese Wellington

This Beef and Cheese Wellington is a savory, comforting dish with a crispy, golden puff pastry on the outside and a deliciously flavorful beef filling inside, combined with spinach and melted cheese. It’s perfect for a special dinner or a hearty family meal.

You’ll Need:

  • 1 lb (450 g) ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups fresh spinach, chopped
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 sheet puff pastry (gluten-free if needed)
  • 1 egg, beaten (for egg wash)
  • 1 tbsp Worcestershire sauce (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until soft and fragrant, about 5 minutes.
  3. Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned and fully cooked, about 7-8 minutes. Season with salt, pepper, and Worcestershire sauce (if using).
  4. Add the chopped spinach to the beef mixture and cook for another 2-3 minutes until wilted. Remove from heat and let the mixture cool slightly.
  5. Roll out the puff pastry on a parchment-lined baking sheet. Place the beef and spinach mixture in the center, spreading it evenly. Sprinkle shredded cheese over the beef mixture.
  6. Fold the pastry over the filling to form a log, sealing the edges. Brush the top of the pastry with the beaten egg for a golden, shiny finish.
  7. Use a sharp knife to make a few slits on the top of the pastry to allow steam to escape.
  8. Bake for 25-30 minutes, or until the pastry is golden and puffed.
  9. Let the Wellington rest for 5 minutes before slicing and serving.
