Ingredients
For the base
- 2 cups crushed biscuits (Graham crackers or tea biscuits)
- ½ cup melted butter
For the cream layer
- 2 cups heavy whipping cream (cold)
- ½ cup powdered sugar
- 1 tsp vanilla extract
- 1 cup cream cheese (softened)
For the fruit layer
- 3–4 fresh peaches, sliced
or 1 can peach slices (well drained)
Optional topping
- Extra crushed biscuits
- Fresh mint leaves
Instructions
- Prepare the base
Mix crushed biscuits with melted butter. Press firmly into the bottom of a glass dish. Chill for 10 minutes. - Make the cream
Beat cream cheese until smooth. Add powdered sugar and vanilla.
In a separate bowl, whip the heavy cream until stiff peaks form.
Gently fold whipped cream into the cream cheese mixture. - Assemble layers
- Spread half of the cream over the biscuit base
- Add a layer of peach slices
- Spread remaining cream on top
- Decorate
Arrange peach slices on top and sprinkle crushed biscuits. - Chill
Refrigerate for at least 4 hours (overnight is best).
