Savory Olive Cheese Loaf

Ingredients

  • 2 cups (250g) all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 3 large eggs
  • ½ cup (120 ml) milk
  • ⅓ cup (80 ml) olive oil (or melted butter)
  • 1½ cups (150–180g) shredded cheese (cheddar, Swiss, or Gruyère)
  • ¾ cup sliced olives (black or green, pitted)
  • ¾ cup diced cooked ham or bacon (optional but recommended)
  • 2–3 tbsp chopped fresh herbs (parsley, chives, or thyme)
  • Optional: ½ cup diced bell peppers or onions for extra flavor

👩‍🍳 Instructions

  1. Preheat oven to 350°F (180°C). Grease or line a loaf pan.
  2. In a bowl, whisk together:
    • Flour
    • Baking powder
    • Salt & pepper
  3. In another bowl, beat:
    • Eggs
    • Milk
    • Olive oil
  4. Combine wet and dry ingredients until just mixed (don’t overmix).
  5. Fold in:
    • Cheese
    • Olives
    • Ham/bacon
    • Herbs (and veggies if using)
  6. Pour batter into the loaf pan and smooth the top.
  7. Bake for 40–50 minutes, until golden and a toothpick comes out clean.
  8. Let cool for 10–15 minutes before slicing.
