Step 1: Cook the Beef
- Place a skillet over medium-high heat and add the ground beef.
- Cook until completely browned, breaking it apart with a wooden spoon or spatula as it cooks. Drain any excess grease.
- Stir in the taco seasoning packet and \frac{2}{3} cup of water.
- Bring to a simmer, then reduce heat to low and let it simmer for about 3–5 minutes until the sauce thickens. Remove from heat and let it cool slightly.
Step 2: Assemble the Roll-Ups
- Lay a street taco flour tortilla flat on a clean surface.
- Spoon a generous line of seasoned ground beef down the center of the tortilla.
- Top the beef with a handful of the shredded Mexican cheese blend.
- Fold the left and right sides of the tortilla slightly inward over the filling (to keep the sides secure), then roll the tortilla tightly from the bottom up into a log shape.
Pro Tip: Keep the seam side facing down on a plate while you assemble the rest so they don’t unroll.
Step 3: Fry to Golden Perfection
- Heat about \frac{1}{2} inch of vegetable oil in a large skillet over medium heat (around 350°F / 175°C if you have a thermometer).
- Carefully place the roll-ups into the hot oil, seam-side down first. This seals the tortilla shut so the cheese doesn’t leak out.
- Fry for 1–2 minutes until the bottom is bubbly and golden brown, then gently flip to fry the other side.
- Once completely golden-brown and crispy all around, remove them from the oil.
Step 4: Drain and Serve
- Transfer the fried roll-ups to a plate lined with paper towels to drain any excess oil.
- Cut them diagonally in half to show off the cheesy, meaty center.
- Serve hot with your favorite dipping sauces like salsa, guacamole, or sour cream!
