Crispy Southern Fried Squash

Ingredients

  • 4 medium yellow squash, sliced into ¼-inch rounds
  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 2 large eggs
  • ½ cup buttermilk
  • Vegetable oil, for frying

Optional Dipping Sauce

  • ½ cup ranch dressing
  • 1 tablespoon hot sauce
  • 1 teaspoon honey

Instructions

Step 1: Prepare the Squash

Wash the squash thoroughly and slice it into even rounds about ¼ inch thick. Pat the slices dry with paper towels to remove excess moisture. This helps the coating stick better and creates a crispier result.

Step 2: Make the Coating

In a shallow bowl, combine the flour, cornmeal, garlic powder, onion powder, paprika, salt, and black pepper. Mix well to evenly distribute the seasonings.

In a separate bowl, whisk together the eggs and buttermilk until smooth.

Step 3: Bread the Squash

Dip each squash slice into the egg mixture, making sure it is fully coated. Then transfer it to the flour-cornmeal mixture and coat both sides thoroughly. Place the coated slices on a baking sheet or plate while you finish the remaining squash.

Step 4: Heat the Oil

Pour about 2 inches of vegetable oil into a deep skillet or heavy-bottomed pan. Heat the oil to 350°F (175°C). If you do not have a thermometer, test the oil by dropping in a small pinch of coating mixture. It should sizzle immediately and float to the surface.

Step 5: Fry Until Golden

Carefully place several coated squash slices into the hot oil, being careful not to overcrowd the pan. Fry for 2–3 minutes per side, or until golden brown and crispy.

Remove the fried squash with a slotted spoon and place on a paper towel-lined plate to drain excess oil.

Step 6: Serve

Mix the ranch dressing, hot sauce, and honey if using the dipping sauce. Serve the fried squash hot and crispy alongside the sauce.
