Cherry Custard Bake (Cherry Clafoutis)

Ingredients:

  • 2 medium zucchinis (grated)
  • 4 large eggs
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • ½ cup grated cheese (cheddar, mozzarella, or parmesan)
  • ½ cup breadcrumbs (or flour)
  • 2 tbsp olive oil
  • 2 tbsp chopped fresh parsley (or herbs of choice)
  • Salt and black pepper to taste
  • Optional: pinch of paprika or chili flakes

👩‍🍳 Instructions:

  1. Prep the zucchini
    • Grate the zucchini and squeeze out excess moisture using a clean towel.
  2. Mix the base
    • In a bowl, combine zucchini, eggs, onion, garlic, cheese, breadcrumbs, parsley, salt, and pepper.
    • Mix until well combined.
  3. Cook
    • Heat olive oil in a non-stick pan over medium heat.
    • Pour the mixture into the pan and press it down evenly (like a thick pancake).
  4. Golden crust
    • Cook for about 8–10 minutes until the bottom is golden and set.
  5. Flip
    • Carefully flip (use a plate if needed) and cook the other side for another 6–8 minutes.
  6. Serve
    • Slide onto a plate, garnish with herbs, and slice like a cake.

🍽️ Tips:

  • Add cooked potatoes or corn for extra texture (like in the image).
  • Serve with yogurt sauce, sour cream, or a fresh salad.
  • Works great as breakfast, lunch, or a light dinner.
