Ingredients:
- 2 medium zucchinis (grated)
- 4 large eggs
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- ½ cup grated cheese (cheddar, mozzarella, or parmesan)
- ½ cup breadcrumbs (or flour)
- 2 tbsp olive oil
- 2 tbsp chopped fresh parsley (or herbs of choice)

- Prep the zucchini
- Grate the zucchini and squeeze out excess moisture using a clean towel.
- Mix the base
- In a bowl, combine zucchini, eggs, onion, garlic, cheese, breadcrumbs, parsley, salt, and pepper.
- Mix until well combined.
- Cook
- Heat olive oil in a non-stick pan over medium heat.
- Pour the mixture into the pan and press it down evenly (like a thick pancake).
- Golden crust
- Cook for about 8–10 minutes until the bottom is golden and set.
- Flip
- Carefully flip (use a plate if needed) and cook the other side for another 6–8 minutes.
- Serve
- Slide onto a plate, garnish with herbs, and slice like a cake.
