Milk or buttermilk
Vegetable oil for frying

Butter or pan drippings
All-purpose flour
Milk
Salt

Instructions
Tenderize the steaks if needed and season both sides with salt and pepper.
In a shallow bowl, mix flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper.
In another bowl, whisk eggs with milk or buttermilk.
Dredge each steak in the flour mixture, then dip into the egg mixture, and coat again in flour, pressing well so the breading sticks.
Heat vegetable oil in a skillet over medium heat. Fry the steaks until golden brown and crispy on both sides. Remove and keep warm.
For the gravy, use the same pan. Add butter or a little of the frying oil, sprinkle in flour, and whisk until lightly browned. Slowly add milk, whisking until smooth and thick. Season with salt and black pepper.
Serve the chicken fried steak hot, topped generously with creamy gravy, just like in the image with mashed potatoes and corn on the side.
