Classic peach cobbler

 Ingredients

For the base

  • 2 cups crushed biscuits (Graham crackers or tea biscuits)
  • ½ cup melted butter

For the cream layer

  • 2 cups heavy whipping cream (cold)
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup cream cheese (softened)

For the fruit layer

  • 3–4 fresh peaches, sliced
    or 1 can peach slices (well drained)

Optional topping

  • Extra crushed biscuits
  • Fresh mint leaves

 Instructions

  1. Prepare the base
    Mix crushed biscuits with melted butter. Press firmly into the bottom of a glass dish. Chill for 10 minutes.
  2. Make the cream
    Beat cream cheese until smooth. Add powdered sugar and vanilla.
    In a separate bowl, whip the heavy cream until stiff peaks form.
    Gently fold whipped cream into the cream cheese mixture.
  3. Assemble layers
    • Spread half of the cream over the biscuit base
    • Add a layer of peach slices
    • Spread remaining cream on top
  4. Decorate
    Arrange peach slices on top and sprinkle crushed biscuits.
  5. Chill
    Refrigerate for at least 4 hours (overnight is best).

 Serving Tips

  • Serve cold for best texture
  • Can be made 1 day ahead
  • Substitute peaches with mango, strawberries, or pineapple
