Ingredients

  • 2 cups green peas (fresh or frozen)
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1½ cups milk
  • Salt and black pepper, to taste
  • Pinch of nutmeg (optional)
  • 4 slices bread, toasted
  • Optional: chopped parsley or onion

Instructions

  1. Cook peas in lightly salted water until tender; drain and set aside.
  2. In a saucepan, melt butter over medium heat. Stir in flour and cook 1 minute.
  3. Slowly whisk in milk and cook until thick and smooth.
  4. Season with salt, pepper, and nutmeg if using.
  5. Fold peas into the sauce and warm through.
  6. Spoon generously over hot toast and serve immediately.
