Ingredients :
1 whole chicken, cut into pieces
2 cups buttermilk
2 cups all-purpose flour
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon baking powder
Oil for frying (lard or vegetable oil)
👉Instructions :
Place chicken pieces in a bowl and pour buttermilk over them. Cover and chill for at least 2 hours or overnight.
In a separate bowl, mix flour, paprika, garlic powder, onion powder, salt, pepper, and baking powder.
Heat oil in a large cast-iron skillet over medium heat until hot.
Remove chicken from buttermilk, letting excess drip off, then dredge each piece in the seasoned flour.
Place chicken gently into the hot skillet, skin side down. Do not overcrowd the pan.
Fry until golden brown on each side, 6–8 minutes per side, adjusting heat as needed.
Transfer to a wire rack or paper towels to drain.
Serve hot with biscuits, mashed potatoes, or coleslaw.
