Potato Cakes

Ingredients:

  • 3–4 medium potatoes (boiled & mashed)
  • 2 tbsp cornstarch (or flour)
  • 2 tbsp chopped fresh parsley or cilantro
  • 2 cloves garlic (minced)
  • 1 small onion (finely chopped, optional)
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • ½ tsp paprika (optional)
  • Oil for frying

Instructions:

1. Prepare the mixture

  • Mash the boiled potatoes until smooth (no lumps).
  • Add cornstarch, herbs, garlic, onion, salt, pepper, and paprika.
  • Mix well until it forms a soft dough.

2. Shape

  • Take small portions and roll into balls.
  • Flatten slightly to form thick discs (like in your image).

3. Chill (important)

  • Place them on a tray and refrigerate for 15–20 minutes.
  • This helps them hold shape while frying.

4. Fry

  • Heat oil in a pan over medium heat.
  • Fry each cake for 3–4 minutes per side until golden brown and crispy.

5. Serve

  • Serve hot with ketchup, garlic sauce, or yogurt dip.

🔥 Tips:

  • If mixture is too soft → add a bit more cornstarch.
  • For extra crispiness → coat lightly in breadcrumbs before frying.
  • You can also bake at 200°C (400°F) for ~25 minutes (flip halfway).
