Ingredients:
- 3–4 medium potatoes (boiled & mashed)
- 2 tbsp cornstarch (or flour)
- 2 tbsp chopped fresh parsley or cilantro
- 2 cloves garlic (minced)
- 1 small onion (finely chopped, optional)
- ½ tsp salt (or to taste)
- ½ tsp black pepper
- ½ tsp paprika (optional)
- Oil for frying
Instructions:
1. Prepare the mixture
- Mash the boiled potatoes until smooth (no lumps).
- Add cornstarch, herbs, garlic, onion, salt, pepper, and paprika.
- Mix well until it forms a soft dough.
2. Shape
- Take small portions and roll into balls.
- Flatten slightly to form thick discs (like in your image).
3. Chill (important)
- Place them on a tray and refrigerate for 15–20 minutes.
- This helps them hold shape while frying.
4. Fry
- Heat oil in a pan over medium heat.
- Fry each cake for 3–4 minutes per side until golden brown and crispy.
5. Serve
- Serve hot with ketchup, garlic sauce, or yogurt dip.
🔥 Tips:
- If mixture is too soft → add a bit more cornstarch.
- For extra crispiness → coat lightly in breadcrumbs before frying.
- You can also bake at 200°C (400°F) for ~25 minutes (flip halfway).
