Ingredients
- 2 cups (250g) all-purpose flour
- 1 tbsp baking powder
- ½ tsp salt
- ½ tsp black pepper
- 3 large eggs
- ½ cup (120 ml) milk
- ⅓ cup (80 ml) olive oil (or melted butter)
- 1½ cups (150–180g) shredded cheese (cheddar, Swiss, or Gruyère)
- ¾ cup sliced olives (black or green, pitted)
- ¾ cup diced cooked ham or bacon (optional but recommended)
- 2–3 tbsp chopped fresh herbs (parsley, chives, or thyme)
- Optional: ½ cup diced bell peppers or onions for extra flavor
👩🍳 Instructions
- Preheat oven to 350°F (180°C). Grease or line a loaf pan.
- In a bowl, whisk together:
- Flour
- Baking powder
- Salt & pepper
- In another bowl, beat:
- Eggs
- Milk
- Olive oil
- Combine wet and dry ingredients until just mixed (don’t overmix).
- Fold in:
- Cheese
- Olives
- Ham/bacon
- Herbs (and veggies if using)
- Pour batter into the loaf pan and smooth the top.
- Bake for 40–50 minutes, until golden and a toothpick comes out clean.
- Let cool for 10–15 minutes before slicing.
