Ingredients:
- 6-8 ripe loquats (about 2 cups of fruit)
- 1 cup sugar (adjust based on sweetness preference)
- 1/2 cup water
- 1 tablespoon lemon juice
- 1/2 teaspoon lemon zest (optional for added flavor)
- 1/2 teaspoon cinnamon (optional, for warmth)
Instructions:
- Prepare the Loquats:
- Wash the loquats thoroughly, removing the skins and seeds. Cut the fruit into small pieces, discarding any seeds. The fruit will be a little fibrous, so make sure to chop it well.
- Cook the Fruit:
- In a medium saucepan, combine the chopped loquats, sugar, water, lemon juice, and optional cinnamon. Stir to combine.
- Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and let it simmer, stirring occasionally.
- Simmer Until Thickened:
- Let the mixture cook for 30-40 minutes, or until it thickens into a jam-like consistency. If it gets too thick, add a little more water, but keep in mind that it will thicken further as it cools.
- Check for Doneness:
- To test if the jam is done, place a small spoonful on a cold plate and let it sit for a minute. Run your finger through the jam, and if it wrinkles and doesn’t run, it’s ready.
- Jar and Cool:
- Once the jam is done, pour it into sterilized jars while hot. Seal the jars tightly and let them cool.
- Serve:
- Enjoy your homemade loquat jam on toast, with yogurt, or as a topping for pancakes!
