Slow Cooker Cashew Chicken

Ingredients:

  • 600g (1.3 lb) chicken breast or thighs (cut into bite-size pieces)
  • 1 cup cashew nuts (unsalted, lightly toasted if possible)
  • 3 cloves garlic (minced)
  • 1 tbsp fresh ginger (grated)
  • Β½ cup soy sauce
  • ΒΌ cup hoisin sauce
  • 2 tbsp honey or brown sugar
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • Β½ cup chicken broth
  • 1–2 tsp chili flakes (optional, for heat)
  • 2 tbsp cornstarch + 2 tbsp water (slurry)
  • 2 green onions (chopped)
  • Fresh cilantro for garnish

  1. Prepare the sauce
    • In a bowl, whisk together soy sauce, hoisin sauce, honey, rice vinegar, sesame oil, garlic, ginger, and chicken broth.
  2. Load the slow cooker
    • Add the chicken pieces to the slow cooker.
    • Pour the sauce over the chicken and mix gently.
  3. Cook
    • Cover and cook:
      • Low: 4–5 hours
      • High: 2–3 hours
  4. Thicken the sauce
    • Mix cornstarch with water, stir into the slow cooker.
    • Cook for another 15–20 minutes until the sauce thickens.
  5. Add cashews
    • Stir in cashews during the last 10–15 minutes (keeps them crunchy).
  6. Finish & serve
    • Garnish with green onions and cilantro.
    • Serve hot over rice or noodles.

  • For extra crispiness, lightly pan-fry the chicken before adding it to the slow cooker.
  • Add bell peppers or broccoli for a veggie boost.
  • Adjust sweetness/spice to your taste.
